Menu for 6/2/14-6/8/14

What a long, difficult week. I haven't cooked since Monday. I'm barely sleeping but always tired, and it seems like everything I eat upsets my stomach. I'm sure it's all stress but it's incredibly frustrating.

I didn't feel like doing anything around the house this week. My kitchen is a mess. I only ran the dishwasher Thursday night because Bailey was out of cups and Aaron was out of coffee mugs. Our laundry is piling up in Bailey's room (I share laundry baskets with Bailey because I wash our clothes together... it's makes it easier that there's no sorting involved on laundry day since it's already sorted between the two baskets)
and her floor hasn't been vacuumed in over a week. I had made a whole "to-do" list of things I wanted to accomplish last week including clearing off the book shelves in the living room and cleaning all of the trash out of my car. With good intentions I began Tuesday morning by cleaning the living room floor and vacuuming but my week went downhill from there.

We've had either dinner or lunch at Nana's every day. We had barbecue on Tuesday, sandwiches (thanks to a deli platter someone brought over) on Wednesday, chili dogs on Thursday, pizza for 18 people on Friday (though they bought enough for 30 people), and then Saturday after the funeral the wonderful women from the church brought over a feast. They made macaroni and cheese, green beans, corn, chicken casserole, fried chicken legs and tenders, rolls and cornbread, sweet potatoes, a layered salad of some kind, several desserts including banana pudding and coconut cake, and I there was a gigantic dutch oven of pork roast with carrots, onions, and potatoes that I swear had 15 pounds worth of pork loin and 10 pounds of potatoes. It was all delicious and enough to feed twice as many people as we had. Actually we had leftovers for lunch today and there was still a ton left for Nana to have the rest of the week.

I'm not sure how well Nana is doing. My mom has been helping her out since Tuesday but she said Nana told her she thinks she'll be okay by herself after tonight. I can't imagine how hard it has to be for her. All I know is I would be devastated if I lost Aaron and we've only been together 10 years.

I also have no idea how Mom is doing because I'm sure she's doing everything she can to take care of Nana and not worrying about herself. I know she needs to do laundry and I debated going over to her house tomorrow to help out with that but ultimately decided she would probably want something to keep herself busy.

We haven't decided what we're doing for dinners this week so I'm just going to post the menu as I originally wrote it and see how long we can stick to it. I'm eagerly anticipating new recipe night because I'm going to try out my top Pinterest pick this week. It's a simple crock pot recipe using packaged tortellini with Italian sausage in a creamy tomato sauce. How could that not be amazing?

Okay, since I need to try to get some rest tonight, here is the menu.

Monday:
Breakfast- cranberry and brown sugar oatmeal
Lunch- tuna salad and crackers
Dinner- crescent chicken, green beans, and macaroni and cheese

Tuesday:
Breakfast- scrambled eggs and toast
Lunch- tuna salad and crackers
Dinner- laughing cow spaghetti pie, salad, and garlic toast

Wednesday:
Breakfast- yogurt and cereal
Lunch- leftover spaghetti pie and salad
Dinner- salsa chicken casserole

Thursday:
Breakfast- blueberry streussel muffins
Lunch- leftover salsa chicken casserole
Dinner- crock pot sausage and cheese tortellini, salad, and garlic toast

Friday:
Breakfast- chocolate chip pancakes and strawberries
Lunch- leftover tortellini and salad
Dinner- loaded potato and buffalo chicken casserole, salad, and Hawaiian rolls

Saturday:
Breakfast- chicken biscuits
Lunch- leftover casserole
Dinner- cheesy taco soup

Sunday:
Breakfast- ham, egg, and cheese burritos
Lunch- leftovers
Dinner- crock pot chicken taco bowls
