Menu for 6/23/14-6/29/14

Vacation Bible School starts tomorrow night and that means early family dinners. When I was a little girl Nana would always cook dinner every night of VBS for the whole family. Nana has two children and four grandchildren so there were usually 8-10 people there every night for a week which seemed like a huge party to me. She would make roast beef or meatloaf with peas and mashed potatoes and gravy, lasagna and salad, and fried chicken. I have many fond memories of VBS, but family dinner is one of my favorites.



I also remember having chocolate and vanilla sandwich cookies and fountain Sprite during snack time, painting t-shirts and making picture frames in crafts class, watching the youth of the church put on a play every evening, and saying the pledge to the American flag, the Christian flag, and the Bible. The best part of each night was the hayride pulled by my uncle's tractor. He knew how to go fast enough down bumpy hills to scare us and back the trailer under bushes and trees and over the pond without losing it or injuring anyone. Friday was the end of VBS and a carnival complete with a dunk tank, bouncy castle, snow cones and hot dogs, and lots of games.

I always enjoyed VBS when I was little and as I grew older I took over the nursery's two year old class. I realized the other day that the kids I had in the nursery are graduating from high school next year... way to make me feel old boys. There was one particularly energetic little girl my second year who was downright dangerous. She was the kind of kid who would run right out into a busy street just because you told her not to. I found a special trick to get her to stay with me whenever we were outside by pretending that I was scared to be alone and needed her to comfort me. After hearing me scream the first time she tried to run ahead of me she never let go of my hand outside again the rest of the week.

This will be Bailey and Li'l P's first Vacation Bible School. They're so young that they'll probably spend most of their time playing with the other kids in the nursery or on the playground this year, but I know they'll learn to love VBS just like we did when we were little. In keeping with tradition my cousin J suggested that we have dinner at Nana's all this week so I will probably only be cooking dinner one night this week.

Here's the meal plan.

Monday:
Breakfast- ham, egg, and cheese biscuits
Lunch- dirty rice and salad
Dinner- Nana will provide dinner

Tuesday:
Breakfast- yogurt and cereal
Lunch- dirty rice and salad
Dinner- Nana will provide dinner

Wednesday:
Breakfast- scrambled eggs and toast
Lunch- chicken salad sandwiches and chips
Dinner- Nana will provide dinner

Thursday:
Breakfast- oatmeal with cranberries and brown sugar
Lunch- chicken salad sandwiches and chips
Dinner- Nana will provide dinner

Friday:
Breakfast- yogurt and cereal
Lunch- one pan enchilada pasta, salad, and Hawaiian rolls
Dinner- Nana will provide dinner

Saturday:
Breakfast- scrambled eggs, bacon, and biscuits
Lunch- grilled ham and cheese sandwiches and salad
Dinner- crock pot creamy Italian chicken and pasta, steamed broccoli and carrots, salad, and garlic toast

Sunday:
Breakfast- chicken biscuits
Lunch- grilled ham and cheese sandwiches and salad
Dinner- Admiral will provide dinner
