Lazy Sundays are so nice. I have spent most of today just hanging out, watching television, munching on graham crackers and peanut butter. I didn't have much of a plan for today anyway.
Luckily I have next week's menu already planned. Actually I've had it planned for almost a month. I'm pretty excited about some of our meals this week.
Here is this week's menu.
Monday:
breakfast- yogurt and cereal
lunch- chicken salad and crackers
dinner- chicken taco chili
Tuesday:
breakfast- cereal and bananas
lunch- Nana will provide lunch
dinner- Yaya will provide dinner
Wednesday:
breakfast- oatmeal with nutella
lunch- leftovers
dinner- hamburgers, baked beans, french fries, and macaroni and cheese
Thursday:
breakfast- eggs and toast
lunch- grilled cheese and veggies
dinner- chicken and broccoli alfredo with garlic toast
Friday:
breakfast- oatmeal with cranberries
lunch- peanut butter and jelly
dinner- chicken quesadillas
Saturday:
breakfast- bacon, eggs, and biscuits
lunch- grilled cheese and veggies
dinner- chicken Parmesan and spaghetti marinara with garlic toast
Sunday:
breakfast- bacon and pancakes
lunch- chicken quesadillas
dinner- Admiral will provide dinner
This past week we had some delicious beef stroganoff at Yaya's house and Admiral made pork chops with mushroom gravy and mashed potatoes and green beans. I particularly liked the pork chops tonight. They were delicious! I even brought the other half of my cupcakes to share with everyone.
Since I have no recipes to post and I didn't do anything during Bailey's nap today I thought I would share some pictures of Bailey's 1st birthday cake.
How do you know what a one year old likes? It's kind of hard to tell. All I knew was that Bailey started dancing every time the theme song to My Little Pony: Friendship is Magic came on. So for her birthday we did a Rainbow Dash theme. I made the cakes. That's my Rainbow Dash figurine on top of the smash cake and my brother's figurine to the left of the big cake. The top of the big cake has a fondant cutie mark on it.
Here is a better view of the top of the cake. It took me an hour to get the frosting right on this cake. I watched a tutorial on it and thought it looked easy but once I got working I was having trouble with the icing getting too warm and sliding down the cake.
This one actually took two hours to frost because I did it first. I had a better handle on it by the time I started on the bigger cake. I think I started over on this one about ten times.
This is the inside of the big cake. Since the theme was Rainbow Dash I decided to make a rainbow cake. It's all made with white cake mix. I just added food coloring.
We let Bailey really dig into her cake. She was totally covered in cake! Thankfully I was still working on cutting cake for everyone else so my mom helped clean her up. Her birthday was so much fun (and fun to plan) that I can't wait until November to celebrate again!
