Just one of those days...

Today has been a colossal timing failure.  I woke up late, nap time didn't last long enough, and I started dinner stuff way too late.  The only redeeming accomplishment today was getting my linen closet all organized.

Remember me saying that my house has a severe lack of storage space?  No?  Well, it does.  That is why I will never have a linen closet that is just for linens.  My linen closet is also the medicine cabinet, extra toiletries storage, and it also keeps all of the seasonal things like Easter baskets.



So this is the before/after photo:


It may not look like a drastic change but as far as organization goes it makes a huge difference.  Here it is from the other direction:


I love my house but the closets are a big disappointment here.  The doors don't hang properly.  The tracks for the doors are broken or the rollers are broken.  We got so tired of one of the doors on this closet falling off completely that we gave up and just took the doors down altogether.  It may not look as nice with the closet always open but I've found that it is most convenient when I need to find something in a hurry.

Also on my to do list for nap time today was to at least make the bread for dinner.  Unfortunately today I made the mistake of cleaning that darn linen closet first (bad time management) so I had just set the dough to rise when Bailey woke up from her nap.

Dinner tonight was baked chicken, marinated in Italian dressing, sliced and put on homemade sandwich buns.  We had french fries (and Aaron's macaroni and cheese) and frozen frozen peas.  It was delicious even though we ended up eating an hour later than I had hoped.

I was letting the buns rise the second time while I baked the chicken, but the chicken wasn't done when it was time to bake the buns so I had to bake them together.  It turned out fine but it was one of those nights where I felt like I couldn't keep up.  Also, I had run out of counter space because of all of the hot baking dishes on the counter at once.  I was using the microwave rack to let the buns cool while the fries were in the oven and the cutting board (which takes up an entire section of counter) was being used to slice the chicken but the chicken baking dish was still hot so it was sitting on the stove to cool.  Then there was nowhere to put the macaroni or our plates to be served.  It was just a giant mess which, for someone who likes organization as much as I do, was a nightmare!

On top of the mess in the kitchen I had forgotten it was time to feed the cat and Bailey needed her diaper changed.  Aaron forgot to remind me to change her before I put her in the high chair so she ended up fighting and screaming the entire time I changed her because I had taken her food away and she thought she was being punished.  The best part of the whole thing was I was relying on Aaron to keep an eye on Bailey while I was cooking and he had forgotten to close the bathroom door and lost track of her.  By the time we found her she was in the bathroom floor and her favorite stuffed animal to sleep with was floating in the toilet.

Oh, yes, it has been a very fun day!

And now, at almost 11:00 at night, I think it is time to bake some cupcakes.  Yes, I have lost my mind.  Let me know if you find it.
