What a relaxing day! I got to sleep in today, we had brunch around noon, and dinner at Dad's tonight was fish! Fish is my favorite. We had delicious tilapia with bok choy and sticky rice. I had never had bok choy, but I liked it.
I'm starting to get a little anxious about this week though. Wednesday is Aaron's dad's birthday and Thursday is Aaron's birthday. Birthdays are always demanding on the baker in the family. Aaron's dad wants a Mississippi Mud Pie which I've never made before. It will probably take me two days to make it so I will (hopefully) be starting on it Tuesday afternoon.
Last year Aaron requested a strawberry cake with strawberry frosting, but for some reason I couldn't do the strawberry frosting so I just did chocolate instead. It tasted great, kinda like a chocolate covered strawberry, but Aaron said it wasn't what he asked for so he asked me to try again this year. I'll probably start on it first thing Thursday morning.
If that wasn't enough, the menu for this week turned out slightly labor intensive as well. There will be lots of bread being made in my kitchen this week, from honey yeast rolls to pizza dough to sandwich bread. I guess it's a good thing I love to bake!
There is one new recipe (for me, I've had it loads of times but never made it myself) this week, and one of my favorite meals is on the menu too. This is our menu for the week.
Monday:
Breakfast- cinnamon roll pancakes
Lunch- chicken salad sandwiches
Dinner- baked chicken, mashed potatoes with gravy, macaroni and cheese, and broccoli
Tuesday:
Breakfast- yogurt and cereal
Lunch- Nana will provide lunch
Dinner- Yaya will provide dinner
Wednesday:
Breakfast- oatmeal with bananas and raisins
Lunch- grilled cheese sandwiches
Dinner- chicken stuffed shells and garlic knots at Aaron's parents' house
Dessert- Mississippi Mud Pie
Thursday:
Breakfast- double chocolate chip muffins
Lunch- peanut butter and jelly sandwiches
Dinner- roast beef, mashed potatoes with gravy, peas, and macaroni and cheese
Dessert- Strawberry Layer Cake with strawberry buttercream
Friday:
Breakfast- eggs and toast
Lunch- roast beef sandwiches
Dinner- pizza
Saturday:
Breakfast- bacon, eggs, and biscuits
Lunch- leftover pizza
Dinner- fried chicken, mashed potatoes, macaroni and cheese, and green beans
Sunday:
Breakfast- cinnamon roll pancakes
Lunch- grilled cheese sandwiches
Dinner- Admiral will provide dinner
It's going to be a long week. Wish me luck to make it through!
