Menu for 12/29/14-1/4/15

My holiday season has not quite died down yet. I've been asked to make another batch of tea cakes for a family member and I'll be dropping them off on Wednesday. In addition, my big gift from Yaya, a new dryer that we desperately needed, will be delivered on Wednesday as well.

I used some of my Christmas money to buy a free-standing pantry/cabinet for the kitchen (well, it will actually be in the dining room) and I'm hoping to get it put together and unload my kitchen cabinets into it before the dryer arrives. Our kitchen is severely lacking in both cabinet and counter space and I've nearly run out of room in the boxes on the dining room floor where I keep the overflow pantry items. I actually don't have any room for any kitchen appliances anywhere, much less my nice tall soup pot with the strainer and steamer baskets. (This is how my waffle iron wound up smashed. I had left it on the dining room table to get it off the counter and the cats accidentally knocked it on the floor.)

I received (read: picked out) a new George Foreman grill Christmas morning and I couldn't wait to start using it! Almost everything on the menu this week has something that can be cooked on that grill. I can't wait to try the finger-lickin' chicken. I'm using the rub that I gave out as gifts for Christmas and I didn't have a chance to test the recipe before I handed out the jars.

Here is the plan.

Monday:
Breakfast- pancakes
Lunch- confetti macaroni and cheese
Dinner- kickin' finger-lickin' grilled chicken, scalloped potatoes, macaroni and cheese, peas and carrots, and crescent rolls

Tuesday:
Breakfast- pop tarts and apple slices
Lunch- leftover chicken and potatoes
Dinner- pizza

Wednesday:
Breakfast- bacon, eggs, and biscuits
Lunch- leftover pizza
Dinner- cajun grilled chicken and penne Alfredo

Thursday:
Breakfast- chicken biscuits
Lunch- leftover chicken and pasta
Dinner- cheeseburgers, french fries, and macaroni and cheese

Friday:
Breakfast- cinnamon toast
Lunch- leftover hamburgers
Dinner- Italian marinated grilled chicken, creamy garlic shells, twice baked potatoes, and green beans

Saturday:
Breakfast- chicken biscuits
Lunch- leftovers
Dinner- TBA

Sunday:
Breakfast- ham and cheese omelets and biscuits
Lunch- leftovers
Dinner- Admiral will provide dinner
