Menu for 9/8/14-9/14/14

I have a recipe that I'm dying to share with you and I will just as soon as I get a new waffle iron.

A few weeks ago my brother texted me asking, "Are apple fritter waffles a thing?" So I hit Pinterest to find a recipe and Monday night we had apple fritter waffles.



They may not look like much but these things are fabulous! The recipe I found included a caramel glaze but my brother asked for powdered sugar glaze instead so that's what we went with. The batter is lightly sweetened with brown sugar and then combined with sauteed apples. They're fluffy and loaded with little apple bits. Oh man, I cannot wait to share them!


Bailey seemed to enjoy them as well, along with some breakfast casserole and sausage gravy. She's getting better at eating at the dinner table with us and eating the same foods we eat.

I should add that Bailey is by no means a picky eater. She loves fruit and vegetables and lean meats. She gobbles down cereal and yogurt. Usually when I make her plate I give her a little of everything we eat along with some grapes or berries and cheese cubes and sometimes some frozen vegetables and carrot sticks to round things out. I don't force her to eat anything she doesn't want to eat. I normally don't have to. The thing is, when we're not home she has a problem sitting at the table because there's just too much distraction from toys and people.


Lately she's been doing better. She sits at the dinner table at Nana's and at Admiral's and even at Grandmother and Papaw's most of the time, depending on who is there. Her cousins tend to get her too excited to eat. She doesn't always eat but at least she joins us.


She also has a new favorite activity. I think it's mostly about making a mess, but she builds with them too. She even picks them up when she's finished. She seems to enjoy packing the blocks back into their bag and zipping it up.

I have one more little thing to brag about and then I promise I'll get to the menu. Bailey has been watching Super Why on PBS and the past few weeks she has learned her entire alphabet! She can sing Alpha Pig's alphabet song and she can recognize all of the capital letters. I can't believe it! She's not even 3 yet!

Okay, okay. Done bragging. Here's the menu.

Monday:
Breakfast- French toast and fruit
Lunch- grilled cheese sandwiches and chips
Dinner- salsa chicken casserole at Nana's

Tuesday:
Breakfast- waffles and sausage links
Lunch- grilled cheese sandwiches and chips
Dinner- chicken stuffed shells, salad, and garlic toast

Wednesday:
Breakfast- yogurt and cereal
Lunch- leftover shells
Dinner- chicken, bacon, and ranch macaroni and cheese and Hawaiian rolls

Thursday:
Breakfast- cereal and fruit
Lunch- leftover macaroni and cheese
Dinner- island pork tenderloin, mashed potatoes, macaroni and cheese, steamed broccoli, and Hawaiian rolls

Friday:
Breakfast- scrambled eggs, sausage links, and toast
Lunch- leftover pork tenderloin
Dinner- crock pot barbecue chicken, baked beans, macaroni and cheese, and Hawaiian rolls

Saturday:
Breakfast- breakfast burritos
Lunch- leftover barbecue chicken sandwiches
Dinner- pizza lasagna rolls, salad, and garlic toast

Sunday:
Breakfast- breakfast burritos
Lunch- leftovers
Dinner- Admiral will provide dinner
