Menu for 8/18/14-8/24/14

I hope everyone had a fantastic week! I certainly did. I have an exciting announcement. I was included in the Reader Love post on Annie's Eats this month. I was so pleased to see the photo of Bailey on her blog but when I read what she wrote about it I was deeply touched. She said such kind things! But then she's such a kind person I should have expected it. Anyway, click the link above if you want to check it out.



Last week I bought a really nice pork loin and Thursday I cut it into chops. I decided to go ahead and cook a few of them for dinner that night instead of freezing them all and they really hit the spot. I did a simple skillet chop with some salt and pepper and garlic and then served it with mashed potatoes and steamed broccoli. Even Aaron said they were tasty and that I should make them again soon which is good because we have 9 more chops in the freezer.


I should have known Bailey wouldn't eat dinner that night since she had asked for some cereal after her nap. I made her a plate anyway and she decided to eat on the step ladder. It's actually a rather convenient set-up for her. The one step is a seat and the other is just the right height for a table. I wish I could say she ate her dinner but she mostly just pushed the food around the plate and then tried to feed the broccoli to the cats.


Saturday was a really lovely family day. Bailey woke up early so we all got dressed to go out for breakfast. She even sat still and let me put her hair in pigtails for the first time ever. She tolerated them well. I took them down so she could nap but she let me put them back up afterward and wore them all night at Grandmother and Papaw's house.

We had breakfast at Cracker Barrel. Bailey loves scrambled eggs so we ordered her some eggs and bacon. I can't speak for everyone but my breakfast was exceptional. They cooked my eggs properly (something that rarely happens since I tend to like mine overcooked), the biscuits were fluffy, the apples were perfectly cooked as well, and the hash brown casserole wasn't loaded with onions.


While waiting for our food Bailey colored on her menu and played with the peg game. She sat in her own chair quietly, a tough job for a little one with tons of energy like Bailey. After breakfast we went grocery shopping as a family and bought a roast to make for dinner at Grandmother and Papaw's. It was delicious, as always. Yaya's recipes never fail.


This morning Rhada decided to be brave and hang out in the living room with us. Bailey can't resist Rhada. She loves to pet her, sugar her, and hug her. Rhada is generally very tolerant but she doesn't like when Bailey waves at her. She must find it threatening. Today Bailey was very gentle with Rhada. They had a nice, quiet conversation before Rhada finally succumbed to fear and went to hide in the bedroom.

I so enjoyed last week and I'm hoping that this week will be equally wonderful. I'm certain the food will be. Here's what I'll be cooking this week.

Monday:
Breakfast- yogurt and fruit
Lunch- tuna salad on honey yeast knots
Dinner- Yaya will provide dinner

Tuesday:
Breakfast- scrambled eggs and toast
Lunch- tuna salad on honey yeast knots
Dinner- bowtie skillet lasagna, salad, and garlic toast

Wednesday:
Breakfast- cereal and fruit
Lunch- leftover skillet lasagna
Dinner- sweet corn and bacon skillet macaroni and cheese, sauteed chicken, steamed broccoli, and Hawaiian rolls

Thursday:
Breakfast- breakfast burritos
Lunch- leftover macaroni and cheese
Dinner- 2:00 am chili and crescent rolls

Friday:
Breakfast- almond joy oatmeal
Lunch- leftover chili
Dinner- hot dogs and chips

Saturday:
Breakfast- chicken biscuits
Lunch- leftover chili
Dinner- chicken Parmesan, spaghetti with marinara sauce, salad, and garlic toast

Sunday:
Breakfast- spinach, ham, and cheese omelets
Lunch- leftovers
Dinner- island pork tenderloin with carrot soup and asparagus at Admiral's
