Menu for 3/17/14-3/23/14

I am so tired. I have been all week. I'm having horrible bouts of insomnia. I spend all night trying to sleep, alternating between lying quietly in the dark and knitting in front of the television. By morning I'm too tired to keep my eyes open and then I hear Bailey on the monitor say, "Good morning, Mommy," and I drag myself out of bed and start the day.



Wednesday afternoon we took a family nap. Aaron got off work early and when we put Bailey down for her nap we snuggled up in bed and fell asleep as well. It was really nice and probably the best sleep I got all week.

I spent some of my long nights this week attempting to calculate food costs like Beth from Budget Bytes. I thought it might help me learn where we're wasting our money at the grocery store and which meals are higher cost and should maybe only be on the menu once ever few months. So far it's kind of slow going, but I'm getting the hang of it. I may do a post on it in a few weeks when I feel more comfortable with it.

I finished making the menu for April the other night. (One of the things I did since I couldn't sleep.) February's theme was Pinterest finds. I decided to make April's theme Aaron's favorites. After a couple of weeks of meals he just wasn't interested in I realized I had been focusing on my favorite foods. That's pretty selfish of me. So next month you'll see all the meals that picky eaters go crazy over. We have bacon cheeseburgers, beef stew, pizza, and spaghetti on the menu as well as some new recipes that are sure to be a hit with Aaron. Among the new ones is a recipe that's supposed to taste like Chick-fil-A's chicken nuggets. I thought we could have them with garlic fries and salad and if they're a hit they may become a monthly staple.

But it's not April yet! Here's what we're having this week.

Monday:
Breakfast- blueberry streussel muffins
Lunch- confetti macaroni and cheese and salad
Dinner- Yaya will provide dinner

Tuesday:
Breakfast- blueberry streussel muffins
Lunch- ham and white beans and salad
Dinner- loaded potato and buffalo chicken casserole, salad, and Hawaiian rolls

Wednesday:
Breakfast- cinnamon toast and berries
Lunch- leftover casserole and salad
Dinner- pizza and salad

Thursday:
Breakfast- yogurt and cereal
Lunch- leftover pizza and salad
Dinner- honey mustard pretzel chicken, roasted red potatoes, steamed broccoli and carrots, salad, and honey yeast knots

Friday:
Breakfast- breakfast burritos
Lunch- leftover chicken and salad
Dinner- chicken cordon bleu casserole, steamed broccoli, salad, and honey yeast knots

Saturday:
Breakfast- berry pancakes and bacon
Lunch- leftover casserole and salad
Dinner- beef stew and peasant bread

Sunday:
Breakfast- sausage, gravy, and biscuits
Lunch- leftovers and salad
Dinner- Admiral will provide dinner
