We had a very busy Saturday. I worked Saturday morning and left Bailey with Aaron. When I got home I had to put together a couple of fruit cobblers to take out to the lake. Aaron's sister-in-law and her parents were camping at a lake about 40 minutes away and invited us out to have a cookout. I brought a peach cobbler and a blackberry cobbler. I was really pleased with the feedback especially because I had to really adapt the recipe for the peach cobbler because I didn't have any plain yogurt.
This was our view from the campsite. We were right on the water. There were some ducks that went floating by. Bailey learned to throw rocks in the water and accidentally threw one straight up in the air. It came back down on Aaron's head and she laughed. What is it with kids enjoying seeing adults get hurt?
Aaron's sister-in-law has a 1-2 person camper. It's very small, but much nicer than I had expected. She has air conditioning inside and a tiny fridge and sink. I was very impressed. Bailey was getting a bit overheated so we let her sit inside while she ate her very first marshmallow.
She played in the "kitchen" for a very long time. Notice those rocks on the mat? She put those there. She has an affinity for gravel. She also filled an empty plastic water bottle with rocks.
It was a fun night. We even drove upstream to the dam when it got dark and the lights came on. Its surprisingly pretty.
Tonight my dad made shredded pork tacos that were excellent. He had sauteed peppers and onions, refried beans, lettuce, tomato, black olives (my favorite), cheese, sour cream, taco sauce, and whole wheat tortillas. The pork was so delicious and I really love sauteed peppers on tacos. I think I might actually like fajitas if I got them without the onions.
Bailey was tired and cranky so we had to come home early, but before we left we went on a tour of the driveways in Dad's cul de sac. Bailey went up one driveway, then across and up another, then across and up another... it looked like she was making a funny shaped star the way she kept crossing the street. Some of the neighbors were walking their dog, Marley, who I think is a poodle or poodle mix, and Bailey got to pet her. She even got to wear her new Rainbow Dash outfit tonight.
Since we didn't get to have the chili dog casserole last night I have moved it to this week. We already have all of the ingredients so it should save us a bit on our groceries for the week. Actually, since I didn't get to the store until Thursday last week I have all the food we need for the week except for Friday night.
The schedule will be different. Nana broke her arm last week trying to flip Bailey's pool over to empty it and is having surgery tomorrow to set it. We will still go to Nana's, but I will be providing lunch and probably dinner on Tuesday. Also, Dad has other plans on Sunday so we will be on our own for dinner Sunday.
This is our plan for the week.
Monday:
Breakfast- yogurt and cereal
Lunch- tuna salad and crackers
Dinner- blackened chicken and penne alfredo
Tuesday:
Breakfast- yogurt and cereal
Lunch- turkey and provolone "egg rolls" with thousand island and potato chips
Dinner- baked tilapia, rice, steamed broccoli
Wednesday:
Breakfast- yogurt and cereal
Lunch- tuna salad and crackers
Dinner- chicken taco chili
Thursday:
Breakfast- oatmeal with cranberries and brown sugar
Lunch- leftover chicken taco chili
Dinner- glazed pork chops, macaroni and cheese, mashed potatoes, fresh green beans
Friday:
Breakfast- cereal and fruit
Lunch- leftover chicken taco chili
Dinner- fried chicken, macaroni and cheese, mashed potatoes, steamed broccoli
Saturday:
Breakfast- sausage and pancakes with blackberry compote
Lunch- grilled cheese sandwiches
Dinner- chili dog casserole
Sunday:
Breakfast- bacon, eggs, and biscuits
Lunch- club sandwiches and french fries
Dinner- chicken quesadillas and refried beans
