Menu for 5/20/13-5/26/13


Do you mind if I overload you with adorable for a minute?  Bailey has been wanting to wear her boots ever since her birthday but they were just way too big for her.  She finally fits in them now (well, with 2 pairs of socks on) and she is just the happiest kid ever when I let her wear them.  She keeps bringing them to me so I can put them on her and she stomps on the hardwood floor to hear the neat sound they make.  Isn't it cool when everything is new to you?



I am super excited about this week.  My cousin is going to be leaving in less than two weeks for Kenya to do some mission work and we are throwing him a going away party.  I have been asked to make cupcakes for the party (and I'll be getting paid for them).  He will be gone for 6 months.  I think he is coming home around Thanksgiving.

So, this week I will be working on three different flavors of frosting and three different flavors of cupcakes and, thankfully, I have my new mixer to help me with them!

I've also been working on the menu for June and I am thrilled to try some of the new recipes I found on Pinterest.  I've got a potato and buffalo chicken casserole for Aaron, chicken in a basil cream sauce for myself, and chicken parmesan baked pasta for everyone.

Since there are 5 Thursdays in May, I get to try an extra new recipe this month.  This week our new recipe has smoked sausage in it.  I love smoked sausage.  It's usually cheaper per pound than chicken or beef or even pork, and it's fully cooked so all I have to do is heat it.  This particular recipe is a smoked sausage, potatoes, and cheese casserole.  It looks scrumptious, but it calls for Velveeta cheese which I can't stand.  Don't ask me why, except for my Dad's Chile Con Queso I've never liked Velveeta.  I don't even much care for American cheese slices.  When I make grilled cheese I usually use sliced cheddar, mozzarella, provolone, or Swiss cheese.  We will see how the recipe works without the Velveeta.  I'm sure I can make it work.

Monday:
Breakfast- yogurt and cereal
Lunch- turkey and cheese roll-ups
Dinner- chicken and dumplings

Tuesday:
Breakfast- Cheerios and milk
Lunch- Nana will provide lunch
Dinner- Yaya will provide dinner

Wednesday:
Breakfast- yogurt and berries
Lunch- turkey and cheese "egg rolls" with thousand island dip
Dinner- pizza

Thursday:
Breakfast- French toast muffins
Lunch- chicken salad on crackers
Dinner- cheesy potato and smoked sausage casserole

Friday:
Breakfast- oatmeal with brown sugar and raisins
Lunch- chicken salad on crackers
Dinner- copycat Chick-fil-A chicken nuggets with mashed potatoes, macaroni and cheese, and peas and carrots

Saturday:
Breakfast- chicken biscuits and hash browns
Lunch- leftover cheesy potato and smoked sausage casserole
Dinner- barbecue chicken sandwiches with baked beans and french fries

Sunday:
Breakfast- homemade yeast doughnuts and sausage
Lunch- chicken salad on crackers
Dinner- Admiral will provide dinner
