Mother's Day was great! It's only my second year celebrating as a mother so it's still really special to me. Bailey and I spent the day with Yaya playing outside with new toys. We took Yaya out for Mexican for dinner and Bailey got to try her first chips and salsa. Yaya even helped her dip her chips.
I woke up today in an empty bed, wondering where Aaron had gone. I checked the bathroom, the living room, the kitchen, looked outside and didn't see his truck, and finally went to get my phone to call him before I realized that it was Monday and Aaron was at work. I think someone needs more sleep.
Once I remembered what day it was I also remembered that I needed to get dinner started in the crock pot, but I had forgotten that I needed to go to the store first. I had to wait for Bailey to wake up and eat breakfast. By the time we got home and ate lunch it was too late to start something in the crock pot so I had to rearrange our meal plan again this week. I'm getting used to being flexible on this, but I still don't like it.
Here is the meal plan for the week.
Monday:
Breakfast- yogurt and berries (berries are finally going on sale at the grocery store and I'm thrilled!)
Lunch- chicken nuggets and french fries from KFC (I spent a little of my birthday money)
Dinner- chicken taco casserole
Tuesday:
Breakfast- Cheerios and berries
Lunch- Nana will provide lunch
Dinner- crock pot Italian chicken with roasted red potatoes, macaroni and cheese, and steamed broccoli and carrots
Wednesday:
Breakfast- blueberry muffins
Lunch- spicy sausage pasta skillet
Dinner- cheesy taco soup at Yaya's
Thursday:
Breakfast- yogurt and berries
Lunch- leftover spicy sausage pasta skillet
Dinner- chicken sandwiches with the leftover Italian chicken, french fries, and macaroni and cheese
Friday:
Breakfast- blueberry muffins
Lunch- ham and cheese croissant sandwiches
Dinner- honey garlic pork chops with mashed potatoes, macaroni and cheese, and steamed broccoli
Saturday:
Breakfast- bacon, egg, and cheese sandwiches
Lunch- ham and veggie macaroni and cheese
Dinner- chicken parmesan with linguine marinara
Sunday:
Breakfast- homemade yeast doughnuts and bacon
Lunch- ham and veggie macaroni and cheese
Dinner- Admiral will provide dinner
A few exciting things about summer being on its way:
1) Summer fruits! I love berries! I love strawberries and blueberries but my favorite are blackberries. Summer brings the sweetest blackberries for cobbler, ice cream, cakes, and my favorite dumplings.
2) Summer veggies! There's something just right about grilled zucchini and squash right out of my Mom's garden and there's nothing like sitting on the porch with Nana breaking beans. Okra (also known is the best vegetable ever) is finally coming in too. (I used to be the official okra taster in the Duncan house.) Nana used to can beans and tomatoes and freeze okra and corn. We would have fresh corn all year round, the sweetest, crispiest, butteriest corn.
3) Warm weather means that Bailey can finally play outside in the water! For Mother's Day my Mom bought Nana a little splash mat for the kiddos to play with. Bailey seems to like being sprayed with a squirt gun so I think she'll go crazy over the splash mat. She already loves being outside and she is definitely a runner. I can hardly keep up with her walking up and down Nana's 500 foot driveway. She will walk to the road and back 4 or 5 times every Tuesday (more if you don't make her go back inside).
4) Grilling season is about to start! I'm not an avid griller. I don't even own a grill, but Aaron's parents do. We always have a cook out on Memorial Day, 4th of July, and Labor Day. I man the grill and we have barbecue hot dogs and chicken, hamburgers, and cheeseburgers. Everyone brings something, buns or chips or potato salad, and the whole family gets to spend some time together. It's nice, especially since otherwise we would only see some of the family on Christmas and Easter (or not even Easter like this year) and we really miss everyone. They say that Christmas brings families together and for some families I'm sure that's true, but it seems like summer brings our family together more often.
5) This one isn't about summer actually, just something I'm excited about. My mixer came in! I haven't picked it up yet since I spent Sunday at Mom's for Mother's Day, but my new mixer is waiting for me at my Dad's house. I can't wait to try it out and I have the perfect opportunity to put it to the test next week. My cousin is going to Kenya for 6 months and I'm providing the cupcakes for his going away party next Saturday. I'll be making 3 kinds of cupcakes and 3 kinds of frosting. I can't wait to share the pictures with you!
