Menu for 2/17/14-2/23/14

It has been a great week! We got to visit Yaya and Nana without any weather difficulties, but we still got a snow day (well, Daddy got a snow day) on Thursday. Wednesday evening we had 6 inches of snow in the yard. Since we had Daddy home on Thursday morning we had some waffles to celebrate.



I made my first (well technically second but it's been 10 years since my last attempt) cheesecake. It turned out better than I had expected, but it was more difficult than I had expected. Difficult is probably the wrong word. It was more time consuming than I had expected. Still, it was a delicious treat for our Valentine's Day dinner, which didn't turn out as planned either.

Nana got us a good deal on a beef roast that I was going to make on Friday night instead of the originally planned buffalo chicken pasta, but Aaron's work truck broke down on a delivery in Kentucky (about 2 1/2-3 hours away) and he had to wait on a tow truck to bring him and the truck back home. He didn't arrive until after 9:00, and then I had to give him a ride to his car. We ended up grabbing Wendy's on the way home because it was so late.

This week's menu is a bit tentative as well. I'm debating making the roast one night this week, but I'm not sure when. Aaron's birthday and his dad's are both this week. We may end up driving out to their house for dinner for one of those nights, but we're not sure which. I may also need to make a dessert for them, but I'm not sure what kind. Perhaps I'll try to make the Mississippi Mud Pie I made last year since I have a spring form pan now. I don't know, it's all kind of up in the air right now.

This is how I originally planned the week, we'll see if it works out that way.

Monday:
Breakfast- apple cinnamon oatmeal
Lunch- grilled cheese, grapes, and salad
Dinner- Yaya will provide dinner

Tuesday:
Breakfast- fried apples and biscuits
Lunch- tuna salad on toast
Dinner- chicken pot pie soup with pie crust crackers and salad

Wednesday:
Breakfast- yogurt and cereal
Lunch- leftover soup and salad
Dinner- cheesy potato and smoked sausage casserole, salad, and Hawaiian rolls

Thursday:
Breakfast- almond joy oatmeal
Lunch- leftover casserole and salad
Dinner- million dollar spaghetti, salad, and garlic toast

Friday:
Breakfast- bacon, eggs, and toast
Lunch- leftover spaghetti and salad
Dinner- loaded potato and buffalo chicken casserole, salad, and Hawaiian rolls

Saturday:
Breakfast- sausage, gravy, biscuits, and cheese eggs
Lunch- leftover casserole and salad
Dinner- crock pot buffalo chicken sliders, macaroni and cheese, french fries, and salad

Sunday:
Breakfast- berry pancakes and bacon
Lunch- leftovers and salad
Dinner- Admiral will provide dinner
