Menu for 9/30/13-10/6/13

I am so ridiculously excited about this week!

First- I'm cooking a two pound beef roast in the crock pot (just like Mom makes hers) and serving it with mashed potatoes and gravy and peas (just like Mom does hers) on Monday.

Second- I'm using some of the leftover roast beef to make a really simple pot roast stew.  I love making soups and stews.  It really starts to feel like fall when I pull out the soup recipes.


Third- I'm using the rest of the leftover roast beef to make some really delicious beef enchiladas!  I really can't wait to taste them.  Mom made them once before and they were awesome!

Fourth- Finally something not food related.  I got all of the supplies for Bailey's birthday gift.  I'm having a Pinkie Pie bean bag toss game made for her!  I know she's only turning two and she won't know how to play with it for awhile, but I'm hoping that it will help her with hand-eye coordination learning to throw the cupcake bean bags into Pinkie Pie's mouth.  I'm also making a pin the cutie mark on Pinkie Pie game for her birthday party out of felt and velcro.  I can't wait for her to try them both!

We've had a rough couple of days together, Bailey and I.  I'm tired from lack of sleep (thanks to having picked up my coffee habit again for the fall/winter) and she has been cranky.  We missed nap time Friday (which was my fault because we weren't home) and then went out to dinner with Dad and CJ and my brother and his girlfriend.  Bailey was so tired and frustrated at dinner that I had to take her outside.  Again, this is my fault.  I knew better than to let her skip her nap.  Then on Saturday we had a diaper issue during nap time and she made a rather large mess requiring the changing of sheets and clothes and diaper (and being hosed down in the tub) which just irritated me and resulted in my opting to stay home Saturday night instead of visiting Grandmother and Papaw with Aaron and Bailey.  I know if I can just get some rest (and get Bailey to rest some) that I will be able to handle things better.

So here's to getting some rest this week if possible.  This is the full menu.

Monday:
Breakfast- oatmeal with cranberries, apples, and maple syrup
Lunch- ham and cheddar sandwiches
Dinner- crock pot roast beef with mashed potatoes and gravy, macaroni and cheese, peas, and yeast rolls

Tuesday:
Breakfast- yogurt and grapes
Lunch- roast beef and cheddar sandwiches
Dinner- Yaya will provide dinner

Wednesday:
Breakfast- scrambled eggs and toast
Lunch- ham and cheddar sandwiches
Dinner- beef stew with leftover roast beef

Thursday:
Breakfast- yogurt and Cheerios
Lunch- leftovers
Dinner- beef enchiladas and refried beans

Friday:
Breakfast- smoothies
Lunch- leftovers
Dinner- hot dogs and french fries

Saturday:
Breakfast- pancakes, bacon, and eggs
Lunch- leftovers
Dinner- double crunch honey garlic chicken with rice, steamed broccoli, and macaroni and cheese

Sunday:
Breakfast- chicken biscuits
Lunch- grilled ham and cheese sandwiches
Dinner- TBA
