Menu for 3/18/13-3/24/13

Wow!  What a fun weekend we've had!  A very busy week and a fun weekend.  We went to Ripley's Aquarium on Saturday with Grandmother and Aunt Shelia.  Bailey had a blast looking at all of the fish and the sharks and rays.  Her favorite part was the penguins.  They swam right up to the glass!  She even came home with a new stuffed penguin wearing a tutu.  It was a long day, but the look on her face when she saw all the fish was totally worth it.

After the aquarium we all gathered at Grandmother and Papaw's house and had a barbecue feast!  I had cooked some chicken in the crock pot with a bottle of barbecue sauce and we shredded it for sandwiches.  We also had fries, macaroni and cheese, coleslaw, hush puppies, and baked beans.  It was a little heavy on starch and short on vegetables, but it was delicious.  There was plenty left over for Grandmother and Papaw to have for lunch today too.

The weather has been beautiful most of the week and today I took Bailey outside to play for a whole hour!  This is the first time it's been warm enough for her to really run around outside.  She played in the yard, walking around and picking up sticks and leaves to examine them, watching birds fly and listening to dogs bark.  Every time the wind blew in her face she would get a huge grin on her face.  I'm so glad spring is finally on its way because Bailey just loves being outside.  I just hope spring lingers awhile since I'm not fond of the heat of the summer.

We went to Admiral's house tonight for meatloaf and baked potatoes.  Uncle Senator brought brownies for dessert.  Bailey climbed all the way up the stairs all by herself but refused to come back down so we had to carry her and block her away from the stairs for the rest of the night.  We don't have any stairs at home so it was her first time actually going up more than three or four steps.

This week we have a few easy dishes and one new recipe.  One night is going to be a bit time consuming but not really difficult.  Aaron helped me plan this week so it's some of his favorite meals.  Our new recipe is an adaption of a Paula Deen recipe so it's bound to be good.  Lunches are going to be lots of leftovers from last week that I froze.  We have some spaghetti and chili dog casserole left plus some chicken from our quesadillas that we can use for tacos or sandwiches.
