Menu for 1/23/15-1/29/15

I was going over the sales ad for last week when I noticed that it's been almost a month since chicken was on sale. Italian sausage, ground beef, pork loin, even ground turkey have all been on sale but not chicken. I was disappointed because we eat more chicken than any other meat. I've been trying to plan the menu around the lack of chicken but it was becoming difficult until I remembered that I have a ton of meat stored in the freezer.

So I started going through the meat (I frequently just throw extra chicken breasts and pork chops in the freezer while I'm cooking) and found I had crazy amounts of everything. Here's what I found:

12 chicken breasts
2 lbs ground beef
1 lb stew meat
1 1/2 lb beef chuck roast
2 (1 1/2 lb) pork loin roasts
3 pork chops
2 rolls breakfast sausage
1 lb bacon
and 1 1/2 recipes of spaghetti sauce

All that and I'm not even including the boxes of hot pockets, garlic toast, and waffles or the bags and bags of beans, vegetables, and fruit.

I'm amazed by all of this food that I hadn't realized I was hoarding so I decided to start working my way through some of the stuff in the freezer. This week I'll be using some of the chicken, the stew meat, and half of the ground beef. I will be buying a whole chicken but only because it's $0.99/lb and I'm dying to roast a chicken.

This is how I'll be cleaning out the freezer

Friday:
Breakfast- scrambled eggs and toast
Lunch- turkey and pepperjack bagel sandwiches
Dinner- pizza and salad

Saturday:
Breakfast- chicken biscuits
Lunch- leftover pizza
Dinner- crescent chicken, mashed potatoes, macaroni and cheese, and green beans

Sunday:
Breakfast- ham and cheese omelets
Lunch- leftovers
Dinner- Admiral will provide dinner

Monday:
Breakfast- cereal and strawberries
Lunch- turkey and pepperjack bagel sandwiches
Dinner- beef stew and cornbread

Tuesday:
Breakfast- scrambled eggs and bagels
Lunch- leftover beef stew
Dinner- chicken taco casserole, black beans, and seasoned rice

Wednesday:
Breakfast- cranberry and brown sugar oatmeal
Lunch- leftover beans and rice
Dinner- roast chicken, mashed potatoes, macaroni and cheese, and peas

Thursday:
Breakfast- bagels with cream cheese and strawberries
Lunch- leftover chicken sandwiches
Dinner- spaghetti and meatballs, salad, and garlic toast
