Taco Spaghetti


Oh, Yaya... She knows how to combine the strangest foods to create something wonderful. I mean, who would think of mixing tacos with spaghetti, right?

Taco spaghetti is made like a casserole and served like a taco salad. Admiral mentioned that part of what makes tacos so appealing is all the different textures. You have warm taco meat, a crunchy shell, and crisp lettuce all in one delicious little package and the best part about taco spaghetti is that you get all of those textures plus pasta!

The recipe makes a lot of food. It's not terribly expensive, especially if you find ground beef or turkey on sale, and it's just as tasty as leftovers. I hope this first recipe back after my hiatus makes up for the last month of missed recipes.

Taco Spaghetti

For the casserole:
8 oz spaghetti or linguini
1 tsp olive oil
1 medium onion, finely diced
1 lb ground beef or turkey
1/2 tsp salt
2 Tbsp homemade taco seasoning (or 1 packet of taco seasoning)
1/2 cup water
1/2 cup salsa (optional, I skipped it this time but the flavor was a little lacking)
1 (4 oz) can diced green chilies, drained
1 (10 oz) package frozen corn, thawed
1 (15 oz) can black beans (optional, I skipped them this time)
1 1/2 cups cheddar or colby jack cheese, shredded

For serving:
tortilla chips
shredded lettuce
diced tomatoes
shredded cheddar or colby jack cheese
sliced black olives
sour cream
salsa
guacamole

Preheat the oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.

Cook the pasta according to the package directions in a large pot and don't forget to salt the water. Once the pasta is cooked to al dente drain and rinse with cold water and set aside. Be careful not to cook the pasta past al dente because it will continue to cook as you mix it with the meat mixture and in the oven.


Meanwhile, heat the oil over medium heat in a large skillet. Add the onions and cook until they are beginning to soften and become clear.


Add the ground beef or turkey and season with the 1/2 tsp salt (more or less to taste) and cook until the meat is browned.


Add the water and taco seasoning and simmer until nearly all of the liquid has evaporated.


Add the salsa, green chilies, corn, and black beans and cook until everything is heated through (my corn was still a little frozen).


Add the pasta and mix it in. I've found it's easier to mix with a good strong pair of tongs or with a pasta fork (OXO is a great brand) but it's difficult to get the ingredients to mix with the pasta without a sticky sauce to help. Just do the best you can.


Remove the skillet from the heat and add about 1 cup of the shredded cheese. Mix until combined. The cheese will probably melt quickly and help all the taco meat mixture stick to the pasta some.


Transfer the whole thing to the prepared baking dish, sprinkle the remaining 1/2 cup of cheese over the top, and bake for 15-20 minutes.


Serve warm in the style of a taco salad.


Add whatever taco toppings you like and some crushed tortilla chips for crunch.


Mine had chips, lettuce, black olives, salsa, and a little extra cheese.

Cheeseburger Soup


Though I've eaten it many times, I don't often cook cheeseburger soup. Usually Yaya makes it as it's one of my brother's favorite meals. The last time she made it Aaron came to dinner with me and he liked the soup so much that I think he would have licked the bowl if we hadn't been at Yaya's house.

Wish Come True: The Best Hamburger Seasoning


Yes, that's right. I couldn't take it any more and had to try the burger seasoning that boasts so shamelessly to be the best and guess what! It was pretty darn good. Maybe not my favorite burger seasoning because it was super spicy and I happen to have a recipe that I use regularly that I love, but man was there plenty of flavor!

A skillet meal! You know what that means... easy to cook, easy to eat, and easy to clean!

I am all about skillet meals on busy nights. Any recipe that says "One-Pan" in the title usually leaps to the top of my try it list. What's easier than throwing everything in the pan and letting it simmer for a few minutes?

I've admitted more than once that I actually like Hamburger Helper meals. It's not just the ease of the meal either, I like the taste as well. But as I've said before there are just too many preservatives and additives in those boxed meals that I can't bring myself to ingest on a regular basis, let alone feed them to Bailey.

Beef Stroganoff (or Beef with Noodles)


When I was little we ate Hamburger Helper at least once a week. Sometimes more often. I'll be the first to admit that I actually like Hamburger Helper... well, some flavors anyway. I'm fond of any of the Italian and Mexican kinds, but one that I'm not particularly taken with is the beef stroganoff.

Baked Ziti

If you are looking for a hearty meal that will feed an army this is the meal for you!


And what a great post to start off 2014.

Honestly, with only the three of us eating (I usually count 2 1/2 since Bailey eats about half as much as us) our leftovers lasted four days! (I will probably cut the recipe in half next time.) I was particularly pleased with the way this meal turned out considering that Aaron doesn't like chunks of tomatoes in his food and I don't care for ricotta cheese.

Meatball Sliders


I love a good recipe that utilizes leftovers and this one absolutely takes the cake for me.

However, sometimes I just want these sliders without having spaghetti so this time I made a batch of meatballs and sauce specifically for this purpose. (I actually saved most of the sauce to use in my lasagna on Saturday.)

Spaghetti with Meat Sauce


How many spaghetti recipes can one girl post?

I must confess: I love pasta. Pasta is probably one of my favorite foods whether it's the main course or on the side. I'm sure anyone who likes spaghetti has a favorite sauce. Mine is actually the sauce from Louis' Drive-In here in Knoxville, TN. It's probably one of the only ground beef sauces I truly enjoy.

Tonight was the last night of leftovers from that amazing roast beef I made Monday night.  I'm sad that all of my roast beef is gone, but I'm also really glad that I made the most of it.  I'm also glad that I got to try something really out of the box with this recipe.

Leftover Roast Beef Stew


Sooooo I'm an idiot.  I admit it.  I willingly admit that I'm a nerd and a dork, but tonight I am a total idiot.  Dinner tonight was supposed to be made in the crock pot.  I put all of the ingredients in the crock pot just like I was supposed to.  I turned the crock pot on low and went to sit down in the living room.

Yaya's Crock Pot Roast Beef


Aaron is always asking me to cook him meals that his mother cooked when he was little.  He wants these sour cream chicken enchiladas that she used to make (which I've tried to make twice with different recipes and he still says they're not right), her beef stew (which as it turns out is just like Mom's vegetable beef soup only a bit thicker), and his favorite food to ask for is roast beef.  Now, Mom always made roast beef in the crock pot.  She would put it in the night before and cook it really low overnight.  By morning the beef was cooked and we could have a roast beef sandwich for lunch!

Beef stew


One of Aaron's favorite meals that his mom makes is beef stew.  A few years ago my mom made this family cook book and when Aaron said he wanted me to make him beef stew I thought No problem, I'll find the recipe in the mom's cook book.  I was wrong.  It turns out my mom never made us any beef stew so we didn't have a recipe for it.
